Purple Goodness
I recently visited my local Publix to take advantage of their $5.99 for a whole, Boar's Head Sub deal. I'm all about balance in life and diet and one of my favorite indulgences is the Jerk Turkey and Chipotle Gouda sub! If you have not tried, I highly recommend it!
While there, I was so excited to come across organic purple sweet potatoes! Purple Sweet Potatoes are also know as Okinawan Potatoes.

I sliced these nutritious beauties in half and roasted them at 450 degrees for 30 minutes total. I like to cook my sweet potatoes flesh side up for 10 minutes. After 10 minutes, I flip them, flesh side down, and cook for an additional 20 minutes.
Before roasting, I brush each slice, front and back, with olive oil. Then I season them with nutmeg and cinnamon. Sometimes I add salt and pepper if I am filling fancy!
After roasting them for 30 minutes, I let them cool then cut them into chunks for my favorite buddha bowl recipe! Head over to the recipes tab for more information about the buddha bowl pictured below:
