Quick and Easy Vegetarian Lettuce Wraps


I was inspired to create this recipe after working at the West Broad Farmer's Market. One of the farmer's selling at the farmer's market a few weeks ago decided to bless me with a bag full of beautiful farm fresh produce including a head of lettuce. Shout out to Mason at Spring Valley EcoFarm in Athens, GA!

What you'll need:

Farm-fresh lettuce head

1 can of Organic Black Beans

Newman's Own All Natural Medium Salsa

1 pkg. of frozen Organic Corn

All Natural Mexican cheese blend

1/2 tbsp butter

2/3 cups water

2 tsp. Cinnamon

2 tsp. Nutmeg

2 tsp. Cumin

1 tsp. Cayanne pepper (x2 for corn and black beans)

Garlic Powder

2 tsp. Bragg Organic Seasoning

1/2 red onion, chopped

1/2 cup vinegar

2 tbsp. Olive Oil

Makes 4-6 wraps

How to prepare:

1. Open the can of organic black beans and pour beans into a strainer or collander. Rinse the beans.

*This is a trick that I learned from Cooking Matters. Canned veggies are an affordable way to eat healthy! I have seen cans of Simple Truth Organic beans for $1 dollar at Kroger! I've also seen cans of organic beans canned in cans without harmful chemicals at the local Co-op. These are a bit pricer. Rinising the beans is an easy way to remove excess sodium and may help rinse away any chemicals from the can material.

2. Pour rinsed black beans into a small sauce pan. Add the water, butter, cumin, cayanne pepper, garlic powder, Bragg seasoning and onion. Cook over medium heat for 15-20 minutes.

3. Warm olive oil into a medium sized skillet over medium heat. Add 1/2 of the package of frozen corn. Add cinnamon, nutmeg and cayanne pepper. Sautee the over medium heat for 10-15 minutes.

*Frozen items are also any easy affordable way to eat veggies. Produce items are frozen and canned at the peak of their freshness. Freezing and canning the items maintains freshness until you are ready to consume them!

3. While the and corn beans are cooking, wash the letucce head in a water vinegar mixture. I add about a 1/2 cup of vinegar to 5 cups of water in a large bowl. Clean the lettuce in this mixture then rinse under running water.

*Vinegar is a natural way to kill germs and bacteria on fruits and vegetables that will be consumed raw.

4. Gently tear clean lettuce leaves from lettuce head. This will serve as the wrap so try to keep the leaves in tact as much as possible! Set the leaves aside.

*I really struggled with this. I used 2 leaves stacked on top of each other in the picture above.

5. Once the corn and black beans are done cooking, make the wraps! First add the black beans to the lettuce leaf, followed by the corn then top with salsa and cheese!
